Pre-bake your gluten-free pie crust according to package.
Wash strawberries, then slice into quarters and set aside.
In a small sauce pan add water, sugar and corn starch and mix to combine. Heat over medium heat until boiling. Reduce heat, add strawberry gelatin and let simmer until thickened. Stirring occasionally, about 5 minutes. Then remove from heat and let cool.
Add slices strawberries to cooled pie crust. Pour strawberry sauce evenly over the top of the strawberries.
Refrigerate for at least 4 hours, until set.
Serve cold, with whipped cream.
