This gluten-free Caprese Bruschetta is so flavorful and delicious. The simple combination of mozzarella, fresh tomatoes, onions, basil and garlic on a slice of gluten-free bread, drizzled with balsamic vinegar makes for the most amazing appetizer. I hope you enjoy!
In a medium bowl mix together diced tomatoes, mozzarella, purple onion, garlic, basil, olive oil, salt and pepper.
Slice gluten free bread and place on a baking sheet under broiler for 1-2 minutes, until bread is lightly toasted, remove and cool.
Top gluten free bread with tomato topping, drizzle with balsamic and serve immediately.
