Prepare vinaigrette dressing by adding balsamic, olive oil, honey, Dijon mustard, salt and pepper and whisking together until completely combined. Set aside.
Place lettuce in a large serving bowl and mix in slices pears, walnuts and pomegranate seeds. Top salad with vinaigrette and mix together. Top with Gouda cheese and toss lightly to combine.
