Heat grill to medium heat.

Season chicken with garlic, onion, salt and pepper on both sides. Then tenderize the chicken with a meat mallet.

Spray the grill with cooking spray and place chicken on the grill. Cook each side for 4-6 minutes. During the last two minutes of cooking add mozzarella. Cook until internal temperature is done.

While chicken is cooking slice tomatoes and basil and set aside.

Remove the chicken from the grill and top with tomatoes and basil and drizzle with balsamic.
