One day my husband decided that he wanted me to make Jambalaya. I thought he was crazy and had no idea how to make it. I immediately just assumed it would be hard and time consuming. I knew the basic idea of ingredients and flavors and decided to try to make an easy one pot version. It worked and turned out delicious. It is now something my family requests regularly and I enjoy making. I hope you enjoy!
Cube chicken and slice sausage, add chicken to a large pot with olive oil cooking on medium heat. When chicken is almost done add shrimp.
Once cooked fully add diced onions and peppers season with Cajun seasoning and saute for 5 minutes.
Turn heat up to high and add diced tomatoes and chicken stock and bring to a boil. Once boiling add okra and rice. Turn to low and cover pot for about 20 minutes stirring occasionally to make sure nothing is sticking to the bottom.
Top with chopped green onions and add extra seasoning if needed.
